A proper meal that happens to be vegetarian, with enough texture and flavor to make you forget you’re not eating meat. Roasted cauliflower, grains, and a generous handful of Bhuja make this actually interesting.

Ingredients

  • 1 small cauliflower (about 400g), cut into florets
  • 2 tbsp olive oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • Sea salt and pepper
  • 200g cooked quinoa or brown rice
  • 150g roasted chickpeas (tinned, drained)
  • 1 cup Bhuja Nut Mix
  • 1 cup mixed leafy greens
  • 100g Greek yoghurt
  • 1 tbsp lime juice
  • Handful fresh coriander

Method

  1. Preheat oven to 200°C.
  2. Toss cauliflower florets with olive oil, cumin seeds, coriander powder, turmeric, salt, and pepper.
  3. Spread on a baking tray and roast for 20-25 minutes until golden and tender.
  4. While cauliflower roasts, warm cooked quinoa gently.
  5. Mix Greek yoghurt with lime juice and set aside.
  6. Divide cooked quinoa and leafy greens between two bowls.
  7. Top with roasted cauliflower, chickpeas, and a generous handful of Nut Mix.
  8. Dollop with lime yoghurt and scatter fresh coriander over top.

Serving Suggestion

Serve warm, bowls piled generously, with extra lime wedges and a drizzle of tahini if you like.
